Ingredients:
• 2 large fish fillets (such as cod or haddock)
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• Salt and pepper to taste
• 1 cup beer (lager works well)
• Vegetable oil for frying
• 2 large potatoes, peeled and cut into thick fries
• Coleslaw, lemon wedges (for serving)
Instructions:
1. In a bowl, whisk together flour, baking powder, salt, and pepper.
2. Gradually whisk in beer until smooth batter forms. Let batter rest for 15-20 minutes.
3. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
4. Pat fish fillets dry with paper towels. Dredge each fillet in seasoned flour, shaking off excess.
5. Dip floured fish fillets into the batter, coating evenly.
6. Carefully place battered fish fillets into hot oil. Fry for 4-5 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
7. In the same hot oil, fry potato fries until golden and crispy, about 3-4 minutes. Remove and drain on paper towels. Season with salt.
8. Serve hot fish and chips with coleslaw, lemon wedges, and tartar sauce if desired.
