Ingredients:
225 grams lo mein noodles or cooked brown rice
450 grams chicken breast or tofu, thinly sliced
300 grams mixed vegetables (bell peppers, broccoli, carrots, snow peas)
2 cloves garlic, minced (about 6 grams)
1 tablespoon ginger, minced (about 6 grams)
60 ml soy sauce
30 ml oyster sauce (optional)
15 ml sesame oil
30 ml vegetable oil, divided
Green onions, chopped (for garnish)
Instructions:
Cook the lo mein noodles according to package instructions or prepare the brown rice.
Heat 15 ml vegetable oil in a large skillet or wok over medium-high heat.
Add sliced chicken or tofu and stir-fry until cooked through. Remove from skillet and set aside.
Add remaining 15 ml vegetable oil to the skillet. Stir-fry minced garlic and ginger for 1 minute until fragrant.
Add mixed vegetables and stir-fry for 3-4 minutes until tender-crisp.
Return cooked chicken or tofu to the skillet. Add soy sauce, oyster sauce (if using), and sesame oil. Stir to combine and heat through.
Serve chicken or vegetable stir-fry over lo mein noodles or brown rice.
Garnish with chopped green onions and serve hot.
