                                        Ingredients:
For the Potatoes:
•	4 medium potatoes, peeled and cut into 1-inch cubes
•	Vegetable oil, for frying
•	Salt, to taste
For the Brava Sauce:
•	1 tablespoon olive oil
•	1 small onion, finely chopped
•	2 garlic cloves, minced
•	1 tablespoon smoked paprika
•	1/2 teaspoon cayenne pepper (adjust to taste for spiciness)
•	1 tablespoon tomato paste
•	1/2 cup tomato sauce or crushed tomatoes
•	1 tablespoon white wine vinegar or red wine vinegar
•	Salt and pepper, to taste
•	1/2 cup water (adjust consistency as needed)
For the Aioli:
•	1/2 cup mayonnaise
•	1 garlic clove, minced
•	1 teaspoon lemon juice
•	Salt and pepper, to taste
Optional Garnish:
•	Chopped parsley or fresh herbs
Instructions:
1.	Prepare the Potatoes:
o	Peel the potatoes and cut them into 1-inch cubes.
o	Rinse the potato cubes under cold water to remove excess starch. Pat dry with a paper towel.
2.	Fry the Potatoes:
o	Heat vegetable oil in a deep-frying pan or pot over medium-high heat.
o	Carefully add the potato cubes in batches, ensuring they are not overcrowded.
o	Fry until golden brown and crispy, about 5-7 minutes per batch.
o	Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.
3.	Make the Brava Sauce:
o	In a saucepan, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.
o	Add minced garlic, smoked paprika, and cayenne pepper. Cook for another minute until fragrant.
o	Stir in tomato paste and cook for a minute to deepen the flavors.
o	Add tomato sauce (or crushed tomatoes), vinegar, salt, pepper, and water. Stir to combine.
o	Simmer over low heat for 10-15 minutes, stirring occasionally, until the sauce thickens slightly. Adjust seasoning to taste.
4.	Prepare the Aioli:
o	In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, and pepper. Mix well until smooth. Adjust seasoning to taste.
5.	Assemble and Serve:
o	Arrange the fried potato cubes on a serving platter.
o	Drizzle the warm brava sauce over the potatoes. You can reserve some sauce for serving on the side.
o	Serve the aioli on the side or drizzled over the potatoes.
o	Garnish with chopped parsley or fresh herbs if desired.
