                                        Ingredients:
•	1 cup dried lentils (green or brown), rinsed
•	2 cups water or vegetable broth
•	1/2 cup diced red onion
•	1/2 cup diced cucumber
•	1/2 cup diced bell pepper (any color)
•	1/4 cup chopped fresh parsley
•	1/4 cup chopped fresh mint
•	Juice of 1-2 lemons
•	3 tablespoons extra virgin olive oil
•	Salt and pepper to taste
Instructions:
1.	In a medium saucepan, bring water or vegetable broth to a boil.
2.	Add rinsed lentils and reduce heat to simmer. Cook for 15-20 minutes, or until lentils are tender but still hold their shape.
3.	Drain any excess liquid from the lentils and let them cool to room temperature.
4.	In a large bowl, combine cooled lentils, diced red onion, diced cucumber, diced bell pepper, chopped parsley, and chopped mint.
5.	In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
6.	Pour the dressing over the salad ingredients and toss gently to combine.
7.	Adjust seasoning if needed. Serve chilled or at room temperature.
