Recipe Instructions:

Traditionally, Kalua Pig is cooked in an imu (underground oven), but here's a simplified version that can be made in a regular oven or slow cooker.
Ingredients:
• 3-4 lbs pork shoulder or pork butt
• 1 tbsp liquid smoke
• 1 tbsp sea salt or Hawaiian salt
• Banana leaves or foil (if using oven)
• Water
Instructions:
1. Preheat your oven to 325°F (160°C) if not using an imu.
2. Rub the pork shoulder all over with liquid smoke and sea salt.
3. If using an imu: Wrap the pork tightly in several layers of ti leaves or banana leaves, then wrap securely in foil. Dig a pit in the ground, line it with hot rocks, place the wrapped pork on top, cover with more leaves and soil, and let it roast for 6-8 hours.
4. If using an oven: Place the pork in a roasting pan lined with banana leaves or foil. Add about 1 cup of water to the pan. Cover tightly with foil.
5. Roast in the oven for about 3-4 hours, or until the pork is very tender and easily pulls apart with a fork.
6. Remove from the oven and let it rest for 15-20 minutes.
7. Shred the pork using two forks. Serve hot with steamed rice and macaroni salad for a traditional Hawaiian plate lunch.
