                                        Ingredients:
Beef or veal medallions: 225 grams (1/2 lb)
Salt: to taste
Pepper: to taste
Olive oil: 15 grams (1 tablespoon)
Beef broth: 120 ml (1/2 cup)
Diced onion: 30 grams (1/4 cup)
Diced bell pepper: 30 grams (1/4 cup)
Garlic clove, minced: 1 clove
Dried thyme: 1/4 teaspoon
Paprika: 1/4 teaspoon
Cooked cheesy grits: for serving
Parsley: for garnish (optional)
Instructions:
Season beef or veal medallions with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Sear medallions on both sides until browned, about 3-4 minutes per side. Remove from skillet and set aside.
In the same skillet, add diced onion, bell pepper, and minced garlic. Cook until softened, about 3 minutes.
Stir in dried thyme and paprika.
Pour in beef broth and return medallions to the skillet.
Reduce heat to low, cover, and simmer for 20-25 minutes, until meat is tender and cooked through.
Serve grillades over cheesy grits as your OMAD meal, garnished with parsley if desired.
