Ingredients:
• 1 whole chicken, cut into pieces (or use chicken thighs, drumsticks, or breasts)
• For the marinade:
• 1/4 cup soy sauce
• 1/4 cup vinegar (white or apple cider vinegar)
• Juice of 2 limes
• 4 garlic cloves, minced
• 1 tablespoon paprika
• 1 tablespoon cumin
• 1 tablespoon dried oregano
• Salt and pepper, to taste
• Vegetable oil, for grilling
Instructions:
• In a large bowl, whisk together soy sauce, vinegar, lime juice, minced garlic, paprika, cumin, oregano, salt, and pepper.
• Add chicken pieces to the marinade, turning to coat evenly. Cover and refrigerate for at least 2 hours, preferably overnight.
• Preheat grill to medium-high heat. Brush grill grates with oil to prevent sticking.
• Remove chicken from marinade and shake off excess. Discard marinade.
• Place chicken pieces on the grill, skin side down. Grill for 6-8 minutes per side, or until chicken is cooked through and juices run clear.
• Remove from grill and let rest for a few minutes before serving. Serve hot with sides like fries, salad, or rice.
