Recipe Instructions:
                                    
                                    
                                        2 Chicken Breasts
1 Tomato chopped
1 Avocado cubed
1 Lemon juice
1 Teaspoon Black Pepper
1 Teaspoon Garlic Powder
1 Tablespoon Parsley Flakes
1 Tablespoon Spicy Chicken Seasoning
Salt
METHOD
Blanch your vegetables (french beans, carrots and onions)
Add black pepper, salt, parsley flakes, garlic powder and chicken seasoning in a plate and mix well
Slice the chicken breast in the center, carefully not to cut all the way through
Generously rub the chicken breast with the seasoning mix
Slice the avocado into cubes and sprinkle the fresh lemon juice, then slice the tomatoes
Stuff the chicken breast with the avocado and tomatoes, not too much
Secure the chicken breast with toothpicks to ensure the filling does not come out
Add vegetable oil to pan
Place the stuffed chicken breast on the pan and fry on medium heat
Turn and cook second side
Pan fry until golden brown and cooked through
Take the toothpicks out and serve the chicken breasts over the blanched veggies
