Recipe Instructions:
Ingredients:
o 6 cups chicken or vegetable broth
o 2 tablespoons fish sauce
o 1 tablespoon tamarind paste
o 1 teaspoon turmeric powder
o 1 tablespoon sugar
o Salt, to taste
o 8 oz rice noodles (banh pho)
o 1/2 lb shrimp, peeled and deveined
o 1/2 lb pork belly, thinly sliced
o 1/4 cup peanuts, crushed
o 1/4 cup fresh herbs (mint, basil, cilantro)
o 1 lime, cut into wedges
o 2 green onions, sliced
o 1/2 cup fried shallots
Instructions:
o Bring chicken or vegetable broth to a boil. Stir in fish sauce, tamarind paste, turmeric powder, sugar, and salt. Simmer for 10 minutes.
o Boil shrimp and pork belly in the broth until cooked through, about 5-7 minutes. Remove and set aside.
o Cook rice noodles according to package instructions. Drain and set aside.
o Place noodles in bowls. Top with shrimp, pork belly, crushed peanuts, fresh herbs, green onions, and fried shallots.
o Pour hot broth over the noodles and garnish with lime wedges.
