Recipe Instructions:

Ingredients:
• 1 lb chicken thighs, cut into bite-sized pieces
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1 tbsp ginger, grated
• 2 tbsp curry powder
• 1 can (14 oz) coconut milk
• 1 cup chicken broth
• Salt and pepper to taste
• Fresh cilantro for garnish
• Cooked rice for serving

Instructions:
1. Heat oil in a large skillet or pot over medium heat.
2. Add chopped onion and cook until softened.
3. Stir in minced garlic, grated ginger, and curry powder. Cook for 1-2 minutes until fragrant.
4. Add chicken pieces and brown on all sides.
5. Pour in coconut milk and chicken broth. Season with salt and pepper.
6. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until chicken is cooked through and sauce is thickened.
7. Serve hot over cooked rice, garnished with fresh cilantro.
