Recipe Instructions:

Ingredients:
• 1 kg beef (such as sirloin or tenderloin)
• 2 carrots, peeled and cut into chunks
• 2 celery stalks, cut into chunks
• 1 leek, white part only, cut into chunks
• 1 onion, peeled and quartered
• 1 bay leaf
• Salt and pepper to taste
• Apple horseradish sauce (store-bought or homemade)
• Chives sauce (store-bought or homemade)
Instructions:
1. In a large pot, place beef, carrots, celery, leek, onion, bay leaf, salt, and pepper.
2. Add enough water to cover the ingredients.
3. Bring to a boil, then reduce heat to low. Simmer gently for about 2-3 hours, until beef is tender.
4. Remove beef from the pot and let it rest for 10 minutes.
5. Slice the beef thinly against the grain.
6. Serve the sliced beef with the boiled vegetables, accompanied by apple horseradish sauce and chives sauce on the side.
