Recipe Instructions:

Ingredients:

1/4 lb beef stew meat, cubed
1/2 cup coconut milk
1/4 cup diced onion
2 garlic cloves, minced
1/2 teaspoon ground turmeric
1/2 teaspoon ground coriander
Salt and pepper to taste
1 tablespoon vegetable oil
Instructions:

Heat vegetable oil in a small pot over medium-high heat.
Add diced onion and minced garlic. Cook until softened, about 3-4 minutes.
Add beef cubes and brown on all sides.
Stir in ground turmeric and ground coriander. Cook for 1 minute.
Pour in coconut milk. Bring to a boil.
Reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally, until beef is tender and sauce is thickened. Add water if needed to prevent it from drying out.
Season with salt and pepper to taste.
Serve hot, traditionally with steamed rice.
