Recipe Instructions:

Ingredients:
• 1 cup dried black-eyed peas, soaked overnight and drained
• 1 cup rice
• 4 cups chicken broth
• 1 onion, chopped
• 1 bell pepper, chopped
• 2 cloves garlic, minced
• 1 ham hock or 1 cup diced ham
• Salt and pepper to taste
• Hot sauce (optional)
Instructions:
1. In a large pot, combine soaked black-eyed peas, rice, chicken broth, chopped onion, bell pepper, minced garlic, and ham hock or diced ham.
2. Season with salt and pepper.
3. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes to 1 hour until peas and rice are tender and liquid is absorbed.
4. Remove ham hock if used, shred meat and return to pot (if applicable).
5. Serve hot, optionally with hot sauce on the side.
