Ingredients:
• Cooked rice, chilled (preferably day-old)
• 2 eggs, beaten
• Mixed vegetables (peas, carrots, corn)
• Cooked shrimp or chicken (optional)
• Soy sauce
• Sesame oil
• Salt and pepper
• Green onions, chopped
Instructions:
1. Heat a large skillet or wok over medium heat.
2. Scramble the beaten eggs in a little oil until cooked through, then remove and set aside.
3. Add more oil to the skillet and stir-fry mixed vegetables until tender.
4. Add cooked shrimp or chicken if using.
5. Stir in chilled rice, breaking up any clumps.
6. Drizzle with soy sauce and sesame oil, and season with salt and pepper to taste.
7. Stir in scrambled eggs and chopped green onions.
8. Cook until heated through and serve hot.
