Recipe Instructions:

Ingredients:
• 500g red bell peppers, roasted and peeled
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 liter vegetable stock
• 200ml coconut milk
• 2 tbsp olive oil
• 1 tsp smoked paprika
• Salt and black pepper to taste
• Fresh basil, chopped (for garnish)
Instructions:
1. Preheat the oven to 200°C (400°F). Roast the red bell peppers until the skins are charred. Peel and chop them.
2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until soft.
3. Add the roasted red peppers, vegetable stock, and smoked paprika. Bring to a boil, then simmer for 10 minutes.
4. Blend the soup until smooth, then stir in the coconut milk. Season with salt and black pepper.
5. Serve hot, garnished with fresh basil.
