Pesto Chicken and Potatoes

medium chicken breast (bone in, skin on, 10 ounces each)
Salt
Pepper

pounds Yukon gold potatoes, cut into 2-inch pieces
3
tablespoons prepared pesto, divided
1
teaspoon olive oil
DIRECTIONS
Heat oven to 375° and line a large sheet pan with parchment paper.
Season chicken on all sides with salt and pepper, then spread ½ tablespoon pesto over the skin of each breast
On the sheet pan, toss potatoes with olive oil and remaining 2 tablespoons pesto. Add chicken breasts to sheet pan.
Roast 40 minutes, until chicken is cooked through and a thermometer inserted in center of breast reads 165°.
Let chicken rest 5 minutes. Remove bone, slice, and serve.
