                                        Ingredients:
2 large eggplants (approximately 800 grams), sliced into rounds
115 grams breadcrumbs
100 grams grated Parmesan cheese
2 eggs, beaten (approximately 100 grams)
Salt and pepper to taste
480 grams marinara sauce
115 grams shredded mozzarella cheese
Fresh basil leaves for garnish
Instructions:
o	Preheat oven to 375°F (190°C). Grease a baking sheet.
o	Dip eggplant slices in beaten eggs, then coat with breadcrumbs mixed with grated Parmesan cheese, salt, and pepper.
o	Place coated eggplant slices on the baking sheet. Bake for 15-20 minutes until golden brown.
o	In a baking dish, spread a thin layer of marinara sauce.
o	Arrange half of the baked eggplant slices in the dish. Top with more marinara sauce and shredded mozzarella cheese.
o	Repeat with remaining eggplant, sauce, and cheese.
o	Cover with foil and bake for 25-30 minutes until bubbly and cheese is melted.
o	Garnish with fresh basil leaves and serve hot as a comforting main dish.
