Ingredients
FOR THE DRESSING
1/2 cup mayo or Greek yogurt
1/4 cup BBQ sauce
1 Tbsp Dijon mustard or yellow mustard
1 Tbsp Worcestershire sauce
1 Tbsp lime juice
FOR THE SALAD
2-3 heads romaine lettuce, chopped
1 (15 oz) can black beans, drained and rinsed or pinto beans
1/2 red onion, diced
1/2 cup chopped cilantro
6 slices bacon, cooked and chopped or ⅓ cup real bacon bits
1 red bell pepper, diced can sub green or orange bell pepper
10 oz grape tomatoes, chopped or 1 cup diced tomatoes
1 cup shredded monterey jack or cheddar cheese
3 cup shredded BBQ beef, or 3 cups shredded beef combined with 1 cup of BBQ sauce
Instructions
For the dressing, whisk together all of the ingredients until combined and refrigerate until ready to use.
Toss together all of the salad ingredients in a large bowl and serve with dressing on the side.
