Recipe Instructions:

Ingredients:
• 1/4 cup diced sweet potato
• 1/4 cup diced carrot
• 1/4 cup diced bell pepper (red or green)
• 1/4 cup diced onion
• 1 garlic clove, minced
• 1/4 cup peanut butter
• 1/2 cup vegetable broth
• 1/4 teaspoon ground cumin
• 1/4 teaspoon ground coriander
• 1/4 teaspoon cayenne pepper (adjust to taste)
• Salt and pepper to taste
• 1 tablespoon olive oil
Instructions:
1. Heat olive oil in a small pot over medium heat.
2. Add diced onion and minced garlic. Cook until softened, about 3-4 minutes.
3. Stir in diced sweet potato, carrot, bell pepper, ground cumin, ground coriander, and cayenne pepper. Cook for 2 minutes.
4. Add peanut butter and vegetable broth. Stir well to combine.
5. Bring to a simmer, then reduce heat to low.
6. Cover and cook for 20-25 minutes, stirring occasionally, until vegetables are tender and stew has thickened.
7. Season with salt and pepper to taste.
8. Serve hot as your OMAD meal, traditionally with rice or fufu (West African dough).
