34. Gỏi Cuốn (Summer Rolls)
Ingredients:
• Rice paper wrappers
• Cooked shrimp, peeled and deveined
• Cooked pork, thinly sliced (optional)
• Rice vermicelli noodles, cooked according to package instructions and cooled
• Lettuce leaves
• Fresh mint leaves
• Fresh cilantro leaves
• Bean sprouts
• Dipping sauce (hoisin-peanut sauce or nuoc cham)
Instructions:
1. Dip one rice paper wrapper into warm water briefly to soften, then lay it flat on a clean, damp kitchen towel.
2. Arrange shrimp, pork (if using), rice vermicelli noodles, lettuce leaves, mint leaves, cilantro leaves, and bean sprouts on the bottom third of the rice paper wrapper.
3. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly to enclose the filling.
4. Repeat with remaining ingredients.
5. Serve the summer rolls whole or sliced in half, with dipping sauce on the side.
