Recipe Instructions:

Ingredients:
• 200g rice noodles
• 200g tofu or chicken, cooked and sliced
• 1 onion, halved
• 1 ginger root, halved
• 2 star anise
• 1 cinnamon stick
• 2 cloves
• 1 liter vegetable or chicken stock
• 1 tbsp fish sauce (optional for vegetarian version)
• Fresh herbs (cilantro, basil), bean sprouts, lime wedges, sliced chili (for garnish)
Instructions:
1. Toast the onion and ginger in a dry pot over medium heat until charred.
2. Add the star anise, cinnamon stick, and cloves. Toast for 1 minute.
3. Add the vegetable or chicken stock and bring to a boil. Simmer for 30 minutes.
4. Strain the broth and return to the pot. Add fish sauce if using.
5. Cook the rice noodles according to package instructions. Drain and set aside.
6. Divide the cooked noodles into serving bowls, and ladle the hot broth over the noodles.
7. Top with tofu or chicken, fresh herbs, bean sprouts, lime wedges, and sliced chili.
