Recipe Instructions:

Ingredients:
• Pita bread or laffa
• 1 medium eggplant, sliced into rounds
• 2 hard-boiled eggs, sliced
• Israeli salad (diced tomatoes, cucumbers, red onions, parsley)
• Tahini sauce
• Amba (pickled mango condiment)
• Fresh parsley or cilantro, chopped (optional, for garnish)
• Olive oil, for frying
• Salt and pepper, to taste
Instructions:
o Heat olive oil in a skillet over medium heat. Fry the eggplant slices until golden brown and tender. Drain on paper towels and season with salt and pepper.
o Warm the pita bread in a toaster or on a skillet until soft and pliable.
o Open the pita bread and spread a layer of tahini sauce inside.
o Stuff with fried eggplant slices, hard-boiled egg slices, Israeli salad, and a spoonful of amba.
o Garnish with chopped parsley or cilantro, if desired.
o Serve immediately while warm and enjoy this flavorful Israeli sandwich!
