Recipe Instructions:

Ingredients:
• 2 tablespoons olive oil
• 1 onion, diced
• 2 carrots, diced
• 2 celery stalks, diced
• 3 cloves garlic, minced
• 8 cups chicken broth
• 2 cups cooked chicken, shredded
• 1 cup egg noodles
• Salt and pepper to taste
• Fresh parsley, chopped (for garnish)
Instructions:
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook until softened.
2. Add minced garlic and cook for another minute.
3. Pour in chicken broth and bring to a boil. Add shredded chicken and egg noodles, and cook until noodles are tender, about 10 minutes.
4. Season with salt and pepper. Garnish with chopped parsley and serve with whole-wheat crackers or a grilled cheese sandwich.
