Salad

Recipe Instructions:

Ingredients:
• 2 large pitas, toasted and torn into pieces
• 2 tomatoes, diced
• 1 cucumber, diced
• 1 red bell pepper, diced
• 1/2 red onion, thinly sliced
• 1 cup chopped fresh parsley
• 1/2 cup chopped fresh mint
• Juice of 2 lemons
• 1/4 cup extra virgin olive oil
• 1 teaspoon sumac (optional)
• Salt and pepper to taste
Instructions:
1. In a large bowl, combine torn pitas, diced tomatoes, diced cucumber, diced red bell pepper, thinly sliced red onion, chopped parsley, and chopped mint.
2. In a small bowl, whisk together lemon juice, olive oil, sumac (if using), salt, and pepper.
3. Pour the dressing over the salad ingredients and toss gently to combine.
4. Let the salad sit for 10-15 minutes to allow flavors to meld and pitas to absorb some dressing.
5. Serve immediately, garnished with additional mint if desired.
