Recipe Instructions:

42. Mechouia Salad
Ingredients:
• 2 red bell peppers
• 2 tomatoes
• 1 red onion, thinly sliced
• 2 cloves garlic, minced
• 3 tablespoons extra virgin olive oil
• Juice of 1 lemon
• 1 teaspoon ground cumin
• Salt and pepper to taste
• Fresh parsley or cilantro for garnish
Instructions:
1. Preheat the grill or broiler.
2. Grill or broil red bell peppers and tomatoes until charred and blistered on all sides.
3. Place grilled vegetables in a bowl and cover with plastic wrap. Let them steam for 10 minutes.
4. Peel and seed the peppers and tomatoes, then chop them into small pieces.
5. In a large bowl, combine chopped grilled peppers, chopped grilled tomatoes, thinly sliced red onion, minced garlic, extra virgin olive oil, lemon juice, ground cumin, salt, and pepper.
6. Toss everything together until well combined.
7. Garnish with fresh parsley or cilantro.
8. Serve mechouia salad at room temperature or chilled.
