Ingredients:

1.5 kg beef tenderloin
Salt and pepper to taste
30 ml (2 tablespoons) olive oil
200 g pâté (duck or chicken liver)
250 g mushrooms, finely chopped
28 g (2 tablespoons) butter
1 sheet puff pastry, thawed
1 egg, beaten
Instructions:

Preheat oven to 200°C (400°F).
Season the beef tenderloin with salt and pepper. Sear in olive oil over high heat until browned on all sides. Let cool.
Spread pâté evenly over the beef.
Sauté mushrooms in butter until most of the moisture has evaporated. Let cool.
Spread mushrooms over the pâté-covered beef.
Roll out puff pastry and wrap it around the beef, sealing the edges with beaten egg.
Place on a baking sheet, brush with egg wash, and bake for 25-30 minutes, or until the pastry is golden brown and the beef is cooked to desired doneness.
Let rest for 10 minutes before slicing.
