Ingredients:
• 2 cups cooked white beans (such as cannellini beans), drained and rinsed if using canned
• 1/2 cup diced red onion
• 1/2 cup diced red bell pepper
• 1/4 cup chopped fresh parsley
• 1/4 cup chopped fresh basil
• 2 tablespoons olive oil
• 2 tablespoons red wine vinegar
• Salt and pepper to taste
Instructions:
1. In a large bowl, combine cooked white beans, diced red onion, diced red bell pepper, chopped fresh parsley, and chopped fresh basil.
2. Drizzle with olive oil and red wine vinegar.
3. Season with salt and pepper to taste.
