Recipe Instructions:

Ingredients:
• 2 lbs potatoes (Yukon Gold or red potatoes), peeled and diced
• 1/2 cup mayonnaise
• 1 tablespoon Dijon mustard
• 1 tablespoon apple cider vinegar
• 1/2 cup diced celery
• 1/4 cup diced red onion
• 1/4 cup chopped fresh parsley
• Salt and pepper to taste
• Optional: hard-boiled eggs, chopped
Instructions:
1. In a large pot, boil diced potatoes until tender but still firm, about 10-15 minutes.
2. Drain and let cool completely.
3. In a large bowl, combine cooled potatoes, mayonnaise, Dijon mustard, apple cider vinegar, diced celery, diced red onion, and chopped parsley.
4. Season with salt and pepper to taste.
5. If using, gently fold in chopped hard-boiled eggs.
6. Chill potato salad in the refrigerator for at least 1 hour before serving.
