Sheet Pan Roast Chicken With Roasted Sweet Potatoes and Wilted Spinach

Recipe Instructions:

INGREDIENTS
1 small chicken (about 3 pounds)
Salt
Pepper
4 medium sweet potatoes, halved lengthwise
1 5-ounce bag baby spinach

DIRECTIONS
Heat oven to 450°.
Dry chicken with paper towels inside and out and season liberally with salt and pepper.
Place sweet potatoes cut side up on a sheet pan and lay chicken on top. Roast 50 to 60 minutes, until chicken is cooked through (the juices should run clear when you separate the breast and the leg, and a thermometer inserted into the thickest part of the leg should read 160°) and the sweet potatoes are very soft. Transfer chicken and sweet potatoes to a cutting board to rest for 10 minutes.
Immediately toss spinach on sheet pan with hot chicken juices, until spinach is mostly wilted.
Carve chicken and serve with roasted sweet potatoes and wilted spinach
