Recipe Instructions:

Ingredients:
• 1 lb small fish (such as smelt, sardines, or small whole fish)
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 cup cold water
• Vegetable oil, for frying
• Lemon wedges, for serving
Instructions:
• Clean and gut the small fish if needed, leaving heads and tails intact.
• In a bowl, whisk together flour, baking powder, salt, and pepper.
• Gradually add cold water while whisking until you get a smooth batter.
• Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
• Dip each fish into the batter, coating it completely.
• Carefully place battered fish into the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per batch.
• Remove fried fish with a slotted spoon and drain on paper towels.
• Serve hot with lemon wedges and your favorite dipping sauce.
