                                        Ingredients:
•	4 fish fillets (such as cod, tilapia, or sea bass)
•	1 onion, thinly sliced
•	2 garlic cloves, minced
•	2 large tomatoes, diced
•	1/4 cup olive oil
•	1/2 cup dry white wine (optional)
•	1 tablespoon tomato paste
•	1 teaspoon dried oregano
•	Salt and pepper, to taste
•	Fresh parsley, chopped, for garnish
Instructions:
•	Preheat oven to 375°F (190°C). Place fish fillets in a baking dish lightly greased with olive oil. Season with salt and pepper.
•	In a skillet, heat olive oil over medium heat. Add sliced onion and minced garlic, sauté until softened.
•	Stir in diced tomatoes, tomato paste, dried oregano, salt, and pepper. Cook for a few minutes until tomatoes break down slightly. Add white wine, if using, and simmer for another 5 minutes.
•	Pour the tomato mixture over the fish fillets in the baking dish.
•	Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until fish is cooked through and flakes easily with a fork.
•	Remove from oven and sprinkle with chopped fresh parsley. Serve hot, accompanied by rice or crusty bread.
