Recipe Instructions:

Ingredients:

1 tablespoon olive oil
1/4 cup diced onion
1 garlic clove, minced
1/4 teaspoon ground cumin
1/4 teaspoon paprika
Salt and pepper to taste
1/2 cup tomato sauce
2 eggs
Fresh parsley or cilantro for garnish (optional)
Crusty bread or pita, for serving (optional)
Instructions:

Heat olive oil in a small skillet or shallow pan over medium heat.
Add diced onion and cook until softened, about 3-4 minutes.
Add minced garlic, ground cumin, paprika, salt, and pepper. Cook for another minute until fragrant.
Pour in tomato sauce and stir to combine. Simmer for 5-7 minutes until the sauce thickens slightly.
Using a spoon, create two wells in the sauce.
Crack eggs into the wells. Season the eggs with a pinch of salt and pepper.
Cover the pan and cook for 5-7 minutes, or until the eggs are cooked to your liking (for runny yolks, cook for less time).
Garnish with fresh parsley or cilantro, if desired.
Serve hot directly from the pan, optionally with crusty bread or pita for dipping.
