                                        Ingredients:
•	500g chicken breast, cut into bite-sized pieces (or firm tofu, drained and cubed)
•	Salt and pepper to taste
•	1 tablespoon cornstarch
•	1/4 cup soy sauce
•	1/4 cup vinegar
•	1/4 cup ketchup
•	1/4 cup brown sugar
•	1/4 cup pineapple juice
•	1 tablespoon vegetable oil
•	1 onion, sliced
•	1 bell pepper, sliced
•	1 cup pineapple chunks (fresh or canned)
•	Cooked brown rice for serving
Instructions:
1.	Season chicken breast or tofu cubes with salt, pepper, and cornstarch.
2.	In a bowl, mix soy sauce, vinegar, ketchup, brown sugar, and pineapple juice until well combined to make the sweet and sour sauce.
3.	Heat vegetable oil in a large skillet or wok over medium-high heat.
4.	Add chicken breast or tofu cubes and cook until browned and cooked through, about 5-7 minutes.
5.	Remove chicken or tofu from skillet and set aside.
6.	In the same skillet, add sliced onion, bell pepper, and pineapple chunks. Stir-fry until vegetables are tender-crisp, about 3-4 minutes.
7.	Return chicken or tofu to the skillet.
8.	Pour sweet and sour sauce over the mixture and stir to coat evenly.
9.	Cook for another 2-3 minutes until heated through and sauce has thickened slightly.
10.	Serve sweet and sour chicken or tofu hot, over cooked brown rice.
