Recipe Instructions:

Ingredients:
• 1 whole chicken (about 1.5 kg), cleaned and dried
• 1 cup coconut milk
• 2 tablespoons tamarind paste
• 3 tablespoons chili paste or blended fresh chilies
• 1 tablespoon ground coriander
• 1 tablespoon ground cumin
• 1 tablespoon turmeric powder
• Salt and sugar to taste
• Bamboo skewers, soaked in water (optional, for grilling)
Instructions:
1. In a bowl, combine coconut milk, tamarind paste, chili paste, coriander, cumin, turmeric, salt, and sugar.
2. Rub chicken inside and out with the spice mixture. Marinate for at least 2 hours or overnight in the refrigerator.
3. Preheat grill or oven to medium-high heat. Grill or roast chicken, basting with marinade and turning occasionally, until chicken is cooked through and juices run clear, about 45-60 minutes.
4. Serve hot, sliced or whole, with remaining marinade as sauce.
