Recipe Instructions:

Ingredients:
o 1 lb ground beef
o 1/2 cup breadcrumbs
o 1/4 cup milk
o 1 egg
o 1/2 onion, finely chopped
o 2 cloves garlic, minced
o 1/4 cup ketchup
o 1 tablespoon Worcestershire sauce
o Salt and pepper, to taste
o 4 large potatoes, peeled and cubed
o 1/4 cup milk
o 2 tablespoons butter
o Salt and pepper, to taste
o 1 cup mixed vegetables (carrots, peas, corn, etc.)
o Salt and pepper, to taste
Instructions:
o Preheat oven to 375°F (190°C). Mix ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix well.
o Spoon mixture into a greased muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes.
o Boil potatoes until tender, about 15-20 minutes. Drain and mash with milk and butter. Season with salt and pepper.
o Steam mixed vegetables until tender, about 5-7 minutes. Season with salt and pepper.
o Plate meatloaf muffins with a scoop of mashed potatoes and steamed vegetables. Enjoy!
