Salad

Recipe Instructions:

Ingredients:
• 1 cup quinoa, rinsed
• 2 cups water or vegetable broth
• 1 cucumber, diced
• 1 bell pepper (any color), diced
• 1/2 cup cherry tomatoes, halved
• 1/4 cup chopped red onion
• 1/4 cup chopped fresh parsley
• Juice of 1-2 lemons
• 3 tablespoons extra virgin olive oil
• Salt and pepper to taste
Instructions:
1. In a medium saucepan, bring water or vegetable broth to a boil.
2. Add rinsed quinoa and reduce heat to simmer. Cook for 15-20 minutes, or until quinoa is tender and liquid is absorbed.
3. Remove from heat and let quinoa cool to room temperature.
4. In a large bowl, combine cooled quinoa, diced cucumber, diced bell pepper, halved cherry tomatoes, chopped red onion, and chopped parsley.
5. In a small bowl, whisk together lemon juice, extra virgin olive oil, salt, and pepper.
6. Pour the dressing over the salad ingredients and toss gently to combine.
7. Adjust seasoning if needed. Serve quinoa salad chilled or at room temperature.
