Recipe Instructions:

Ingredients:
• 500g chicken breast, cut into cubes
• 1 red bell pepper, cut into chunks
• 1 yellow bell pepper, cut into chunks
• 1 zucchini, sliced
• 1 red onion, cut into chunks
• 2 tablespoons olive oil
• 1 tablespoon lemon juice
• 1 teaspoon dried oregano
• Salt and pepper to taste
• Wooden or metal skewers
Instructions:
1. Preheat grill or grill pan to medium-high heat.
2. In a bowl, mix olive oil, lemon juice, dried oregano, salt, and pepper. Add chicken and vegetables and toss to coat.
3. Thread chicken and vegetables onto skewers, alternating pieces.
4. Grill kebabs for 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.
5. Serve with rice or couscous.
