SHEET PAN EGG-IN-A-HOLE

Recipe Instructions:

INGREDIENTS

8 slices of bread
8 large eggs
2 slices of cooked bacon roughly chopped (optional, for garnish)
2 scallions thinly sliced
salt and pepper to taste

INSTRUCTIONS
Preheat oven to 400°F. Lightly grease the surface of a sheet pan with cooking oil spray.

Use a 2.5 inch biscuit cutter to cut out the center of each slice of bread. Save the cut-out bread circles for another recipe (I used mine to make egg toast muffin cups).
Place toasts onto sheet pan. Crack an egg into the center of each toast. Cook in the oven for 8-10 minutes, or until egg whites are set. Garnish with bacon and scallions. Season egg with salt and pepper, to taste. Serve immediately.
