Recipe Instructions:

Ingredients:
• 1 pork knuckle (about 2-3 lbs)
• 2 tablespoons vegetable oil
• Salt and pepper, to taste
• 2 cloves garlic, minced
• 1 teaspoon caraway seeds (optional)
• 1 onion, sliced
• 1 cup chicken broth or beer
Instructions:
• Preheat oven to 350°F (175°C).
• Score the skin of the pork knuckle in a diamond pattern. Rub with vegetable oil, salt, pepper, minced garlic, and caraway seeds (if using).
• Place pork knuckle on a roasting rack or directly in a roasting pan.
• Roast for 2.5 to 3 hours, basting occasionally with chicken broth or beer, until the skin is crispy and the meat is tender.
• Remove from oven and let rest for 10-15 minutes before slicing.
• Serve hot with mustard and a side of sauerkraut or dumplings.
