Recipe Instructions:

Ingredients:
• 1/4 lb white fish fillet, such as cod or tilapia, cut into chunks
• 1/4 lb shrimp, peeled and deveined
• 1/4 cup diced onion
• 1/4 cup diced bell pepper (red or green)
• 1/4 cup diced tomatoes
• 1 garlic clove, minced
• 1/2 cup coconut milk
• 1 tablespoon palm oil (dende oil) or olive oil
• Juice of 1/2 lime
• Salt and pepper to taste
• Fresh cilantro for garnish
• Cooked rice, to serve
Instructions:
1. Heat palm oil or olive oil in a small pot over medium heat.
2. Add diced onion, bell pepper, and minced garlic. Cook until softened, about 3-4 minutes.
3. Stir in diced tomatoes and cook for another 2 minutes.
4. Add coconut milk and bring to a simmer.
5. Add fish chunks and shrimp. Cook for 5-7 minutes, until seafood is cooked through.
6. Season with lime juice, salt, and pepper.
7. Serve hot over cooked rice, garnished with fresh cilantro, as your OMAD meal.
