Recipe Instructions:

Ingredients:
• 1 whole Peking duck, cleaned and dried
• 1/4 cup maltose or honey
• 2 tablespoons soy sauce
• 1 tablespoon rice vinegar
• Thin pancakes (store-bought or homemade)
• Hoisin sauce
• Thinly sliced cucumbers
• Thinly sliced scallions
Instructions:
• Preheat oven to 350°F (175°C).
• In a small bowl, mix maltose or honey with soy sauce and rice vinegar.
• Brush duck with the mixture inside and out.
• Hang duck in front of a fan or near an open window for 1-2 hours to dry the skin (optional but enhances crispiness).
• Roast duck in the preheated oven for 1.5 to 2 hours until skin is crispy and duck is cooked through.
• Carve duck into thin slices.
• Serve with thin pancakes, hoisin sauce, sliced cucumbers, and sliced scallions.
• To eat, spread hoisin sauce on a pancake, add duck slices, cucumbers, and scallions. Roll up and enjoy!
