Instructions:
o Cook sweet potato starch noodles according to package instructions. Drain and rinse under cold water. Set aside.
o Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Stir-fry beef until browned. Remove and set aside.
o In the same skillet, add remaining sesame oil. Stir-fry garlic, onion, carrot, bell pepper, and spinach until vegetables are tender-crisp.
o Return cooked beef and noodles to the skillet. Add soy sauce, sugar, salt, and pepper. Stir-fry for another 2-3 minutes until well combined and heated through.
o Transfer Japchae to a serving platter. Garnish with toasted sesame seeds if desired.
o Serve hot as a delicious Korean noodle dish.
