301. Salmon with Roasted Asparagus and Lemon Dill Sauce
Ingredients:
• 4 salmon fillets
• 1 bunch asparagus, trimmed
• Olive oil
• Salt and pepper, to taste
Lemon Dill Sauce Ingredients:
• 1/2 cup plain Greek yogurt
• Juice of 1 lemon
• Zest of 1 lemon
• 2 tablespoons chopped fresh dill
• Salt and pepper, to taste
Instructions:
o Preheat oven to 400°F (200°C). Toss asparagus with olive oil, salt, and pepper on a baking sheet. Roast for 12-15 minutes, until tender and slightly charred.
o Season salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook salmon fillets for 3-4 minutes per side, or until cooked through.
o In a small bowl, mix together Greek yogurt, lemon juice, lemon zest, chopped dill, salt, and pepper.
o Serve salmon fillets with roasted asparagus on the side. Drizzle with lemon dill sauce and garnish with additional dill, if desired.
