Recipe Instructions:

Ingredients:
• 4 chicken breasts or 8 chicken thighs, bone-in or boneless
• 1/4 cup olive oil
• Juice of 2 lemons
• 4 garlic cloves, minced
• 2 tablespoons paprika
• 2 tablespoons chili powder
• 1 teaspoon cayenne pepper (adjust to taste)
• Salt and pepper, to taste
Instructions:
• In a bowl, whisk together olive oil, lemon juice, minced garlic, paprika, chili powder, cayenne pepper, salt, and pepper.
• Place chicken in a large resealable plastic bag or shallow dish. Pour marinade over chicken, coating evenly. Seal bag or cover dish and refrigerate for at least 2 hours, preferably overnight.
• Preheat grill to medium-high heat or preheat oven to 400°F (200°C).
• Grill chicken for 6-8 minutes per side or bake in the oven for 25-30 minutes, or until chicken is cooked through and juices run clear.
• Serve hot with rice, salad, or grilled vegetables. Pili pili chicken pairs well with a refreshing side like cucumber salad or coleslaw.
