Recipe Instructions:

Ingredients:

400g firm tofu, drained and crumbled
1 onion, finely chopped (approximately 150g)
1 bell pepper, diced (approximately 150g)
2 cups spinach leaves (approximately 60g)
1 teaspoon ground turmeric (2g)
1/2 teaspoon ground cumin (1g)
Salt and pepper to taste
2 tablespoons olive oil (30ml)
Instructions:

Heat Oil:

Heat olive oil (30ml) in a large skillet over medium heat.
Cook Vegetables:

Add finely chopped onion (150g) and diced bell pepper (150g) to the skillet. Cook until softened, about 5 minutes.
Add Tofu and Spices:

Stir in crumbled tofu (400g), ground turmeric (2g), ground cumin (1g), salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until tofu is heated through and slightly golden.
Add Spinach:

Add spinach leaves (60g) to the skillet and cook until wilted.
Serve:

Serve hot as a vegan alternative to scrambled eggs.
