Recipe Instructions:

Ingredients:
• 1 whole chicken (about 1.5 kg), cleaned and dried
• 10 shallots, peeled
• 5 garlic cloves, peeled
• 3 candlenuts or macadamia nuts
• 5 cm fresh turmeric or 1 tablespoon ground turmeric
• 3 cm galangal, peeled and sliced
• 2 lemongrass stalks, white part only, sliced
• 2 tbsp lemon zest
• 2 tablespoons tamarind paste
• Salt and pepper to taste
• Banana leaves (optional, for wrapping)
Instructions:
1. Blend shallots, garlic, candlenuts, turmeric, galangal, lemongrass, and kaffir lime leaves into a smooth paste.
2. Rub chicken inside and out with tamarind paste, salt, and pepper.
3. Stuff chicken cavity with the blended paste. Wrap chicken tightly in banana leaves if using, or place in a roasting pan.
4. Roast in a preheated oven at 180°C (350°F) for 1.5-2 hours, basting occasionally with pan juices, until chicken is cooked through and skin is crispy.
