Recipe Instructions:

INGREDIENTS
1 chicken breast (about 8 ounces, bone-in, skin-on)
¼ teaspoon cumin
Salt
Pepper
1 orange, juiced
1 teaspoon apple cider vinegar
1 teaspoon olive oil
1½ cups cooked quinoa
¾ cup pomegranate seeds (about 1/2 pomegranate)
½ medium avocado, chopped
2 tablespoons fresh parsley, chopped
DIRECTIONS
Heat oven to 450° and line a large sheet pan with parchment paper.
Season chicken on all sides with cumin, salt, and pepper and place on sheet pan. Roast 25 to 30 minutes, until chicken is cooked through and a thermometer inserted in the middle reads 165°.
Cool slightly, then remove bones and thinly slice meat and skin.
In a bowl, whisk orange juice, apple cider vinegar, and olive oil. Add remaining ingredients, including chicken, and toss to coat.
