Recipe Instructions:

Ingredients
1 cup uncooked rice – any variety (see notes below for brown rice)
2 cups water – or chicken broth
1/4 cup diced onion
1 tablespoon butter
8 ounces cremini mushrooms – sliced
1/2 teaspoon dried thyme
salt and pepper to taste
Instructions
Heat oven to 400 °F.
In a 2 quart casserole with a lid add: rice, onion, butter, mushrooms, thyme, salt and pepper.
In a two cup microwave safe measuring cup heat water or broth in microwave for two minutes or until very hot.

Pour hot water over rice mixture and stir. Put lid on (or cover with foil). Bake 25 minutes and check. If all water is gone put lid back on and cool for 5 minutes. Fluff with a fork and serve!
Notes
FOR BROWN RICE: decrease water to 1 3/4 cup and bake for 50 minutes.
No lid to fit your casserole dish? – Just cover tightly with foil!
