Ingredients:
Cabbage: 1 head, shredded (about 600 grams)
Onion: 1, chopped (about 150 grams)
Carrots: 2, grated (about 150 grams)
Vegetable Oil: 2 tablespoons (30 ml)
Tomato Paste: 1/4 cup (60 grams)
Vegetable or Chicken Broth: 1 cup (240 ml)
Salt and Pepper: To taste
Instructions:
o In a large pot or Dutch oven, heat vegetable oil over medium heat. Add chopped onion and grated carrots. Sauté until softened.
o Stir in shredded cabbage and cook for 5-7 minutes until cabbage starts to wilt.
o Add tomato paste, vegetable or chicken broth, salt, and pepper. Stir well to combine.
o Bring to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, stirring occasionally, until cabbage is tender and flavors melded.
o Serve Kapusta hot as a comforting and hearty side dish.
