Recipe Instructions:

Ingredients:
• 500g dried split peas, rinsed
• 1 onion, chopped
• 2 carrots, diced
• 2 celery stalks, diced
• 2 cloves garlic, minced
• 1 liter vegetable stock
• 2 bay leaves
• Salt and black pepper to taste
• 200g ham or smoked sausage (optional for non-vegetarian version)
• Fresh parsley, chopped (for garnish)
Instructions:
1. In a large pot, combine the split peas, onion, carrots, celery, garlic, and bay leaves.
2. Add the vegetable stock and bring to a boil. Reduce heat and simmer for about 1-1.5 hours, or until the peas are tender.
3. If using ham or smoked sausage, add it to the pot in the last 30 minutes of cooking.
4. Remove the bay leaves and season with salt and black pepper.
5. Serve hot, garnished with fresh parsley.
